Welcome to another series of recipe videos with Farmers Market Singapore! Today, I’m gonna show you how to cook Salmon Otah (otak otak). Check out the recipe below:

about 25pcs dried chillies
2 stalks lemongrass (bottom white part)
8-10pcs kaffir lime leaves
5 pcs fresh red chillies
100g shallots
1 whole garlic
20g galangal

2 pcs New Zealand salmon steak w/ skin on, scale off (flake/cut into chunks)
15g belacan
2tsp turmeric
1tsp curry powder
1tsp brown sugar
salt
2 egg whites
1 tsp cornflour
1 tbsp rice flour
150ml coconut milk
Banana leaf
